Monday Meal - Lemon, Spinach and Chickpea Salad

To continue on our summer cooking journey, I stumbled across this recipe and did some adapting to fit our family. It was a super simple summer salad that took minutes to prepare but came up tasting pretty delicious.

Ingredients:
1 can chickpeas, rinsed and drained
1/4 cup olive oil
1/2 lemon
2 cups spinach, chopped

Directions:
Place all ingredients in a large bowl. Mix. Serve cold or at room temperature.
