Monday Meal - Meatloaf

Now, I LOVE meatloaf. It's a huge comfort food with a good side of Cheese Potatoes (stayed tuned for the recipe next week). We probably only make meatloaf once every few months as we do try to limit our ground beef intake, but, if we have ground beef in the house, meatloaf is a go to item.

Ingredients:
1 lb. of ground beef
1 pkg onion soup mix
1 egg
1/3 cup ketchup
1/4 bread crumbs

Mix everything together. Throw it in a loaf pan and bake for about an hour at 350 degrees.

This is also a great recipe to freeze (and give to that friend that just had a baby?) Just mix it, cover the inside of a loaf pan with tin foil, then saran wrap, place the meat on top, cover with the saran and tin foil. Place it in the freezer, once frozen, remove the pan, and attach cooking instructions. A perfect gift to give away without having to buy some form of recyclable container.
