Monday Meal - Simple Chicken Parmesan

We haven't actually used this recipe for awhile, since we've reduced our pasta intake. But, with young children, it's simple to make, and since they will usually eat pasta, something everyone enjoys.

We've done a variation based on this recipe from Kraft.

Ingredients:

1 jar of pasta sauce
Parmesan cheese
2 small boneless skinless chicken breasts
spaghetti
shredded cheese

Throw the chicken breasts in a baking dish, cover in pasta sauce and two types of cheeses, bake for about an hour at 375 degrees. Serve with cooked spaghetti noodles (or whatever pasta you have on hand). Simple, easy, and pretty delicious. Now, if you want to get a few more vegetables in there, I've been known to throw some cauliflower, squash, and/or spinach puree into the veggie packed pasta sauce, just watch the taste as you are adding if you have veggie averse eaters, if you get too much they may be unlikely to try the meal.
